Abstract
The article presents the first results of a research on the development of the dairy sector in Twentieth-century Italy. More specifically, it will analyse the growth of national businesses on internal and external markets during the first thirty years of the century. The essay will also mention the difficulties of the period 1950-80, followed by a remarkable recovery obtained by end of the century, thanks to the success of DOP and IGP products both in Italy and abroad.
