Abstract

Historical analysis of the evolution of the food industry and dairy sector in the 1970s and 1980s. The study discusses the milk production trend during the second half of XX century and the relationship with the dairy industrial sector. Then the appearance of multinationals in Italy is discussed with a special focus on the relation between French and Italian system. At last the research describes out the chhnge of dairy industrial sector in the 1980s and 1990s within the transformation of consumption pattern and the phoneme of privatization.
